INFORMATION:  The bottle states that this is brewed with barely, wheat, rye, oats, & corn.  Hopped with locally grown cascades,  fermented with 3 yeast strains,  and bottled with Brettanomyces.  22oz bottle with no freshness date.  Since this was given to me for review by Lavery, I know that it’s from last year.  They said that the Brett has really had a chance to take hold, so let’s find out!

APPEARANCE: Poured pale yellow with really good clarity. Head is white and has a cloud-like fluffiness going on. It initially stood around two fingers tall, but has settled to just under a finger after about 8 minutes or so. You can see plenty of carbonation bubbles streaming up within the glass. Pretty good head retention.

AROMA: There’s a tart lemony fragrance right away. I’m also getting wild flowers, jasmine, & honey. Very nice.

TASTE: Nice sourness up front. It’s mild for a Brett-beer, but it’s enough to let you know that it’s there. After that, I’m starting to get the various grains and malts that are used in this beer. Maybe just a touch of hop bitterness towards the middle, but it’s very low-key, allowing the other elegant flavors to pull through. The sour flavor creates a drying quality on the back-end. Finishes tart and refreshing.

MOUTHFEEL: Medium-thin body with moderate to high carbonation.

MOREY’S BOTTOM LINE:  A top-notch Saison with just enough Brett to go with the body of this beer.   A must in the summer time for me. One of my favorites within the style.  No need to shop out of town for a good Saison when Lavery makes this year round.  I could drink this til the cows come home.  Cheers!
